Either play story mode or play the online version offline, (I personally use a mod to do so, which allows me to play with my friends). Unlike GTA 5, you cannot choose to enter a private lobby and R* does not seem to care about the amount of hackers and griefers ruining the game for everyone on the server.

I've been playing RDR2 Online for a while and still enjoy it. The world is huge and looks amazing, and there's always something to do, whether it's hunting, missions, or just exploring. It can be a bit grindy when you're starting out, but once you get going it's a lot of fun, especially with friends. Definitely worth trying if you're new and like open-world games.
