Seems like this is the last year for a truly immersive and authentic simulation experience as the titles after this have heavily favored arcade racing over sim. I run no assists in helmet cam mode and have been doing so since motogp 21, It's brutally unforgiving but when you get it right there is nothing more satisfying. The real tug of war is not allowing yourself to get so jacked up in intense battles that you prioritize racing other riders over racing the track. You should always race the track first otherwise you'll be scoring an NC. (DNF) It can take hundreds of hours to get good at this game with full realism settings but there are plenty of assists and AI adjustments to be made to suit your skill level. A superb racing simulation.
